So you had to know I would take that vegan pesto recipe and turn it into a delicious meal. 😇
This is, in my usual style, a totally simple pasta dish that will make you & your family super happy.

Ingredients:
- 1 box of Jovial Gluten-free Organic Farfelle Pasta
- 1 jar of organic vegan pesto
- 1/2 of organic red onion, chopped
- 1 organic red pepper, chopped
- 1 organic orange pepper, chopped
- 1/2 cup of organic cherry tomatoes (we did Sungold since they were in season)
- 1 bunch of organic asparagus, chopped
- Organic olive oil for sauté
- Celtic sea salt
Step one: Sauté all the veggies in a medium sized skillet pan until soft or at desired consistency.
Step two: Cook pasta according to package instructions. Taste a piece of pasta at the end of the boil time to make sure it’s the right consistency for you. I find I usually cook the pasta 1-2 minutes longer than the instructions call for.
Step three: Once pasta consistency is confirmed, drain the pasta and then add in the pesto – add as much pesto as you’d like (I used one jar/serving from the original vegan pesto recipe). Mix until at the desired level.
Step four: Then, put pasta into bowls (serves 1-4 people) and top with the sauteed veggies and a sprinkle of Celtic sea salt.
