I literally cannot with this recipe. It’s that good.
I’ve been wanting to find a way to create grain-free, vegan, Sugar-free cinnamon rolls for a looonnnggg time.
And that time has finally come!
This is the kind of recipe that will have you standing in your kitchen in utter ecstasy and disbelief that eating high-frequency can taste THIS GOOD.
I cannot wait for you to try it! XX
Ingredients for cinnamon rolls:
- 1/2 c organic non-dairy milk – I used oat, hemp would be great too
- 1/2 c Miyoko’s butter, melted
- 1.5t baking powder
- 2 c grain-free flour blend (example: 1.5ish c organic almond flour, 1/8ish c organic coconut flour, 1/4ishc tapioca flour)
- 1.5T Forager dairy-free, plain, unsweetened yogurt
- 1 cup organic applesauce
Ingredients for “cream cheese” icing:
- 4oz of plain non-dairy cream cheese, like Miyokos, at room temperature
- 3T vegan or regular butter, melted
- 1/2c non-sugar confectioner’s sugar, like monkfruit confectioner’s or Swerve confectioner’s
Step 1: Get out a pie pan and coat with butter.
Step 2: Mix all dough ingredients together EXCEPT for the applesauce (that comes later). It will form a nice doughy-dough. Add more flour if needed.
Step 3: Using a rolling pin (or your hands, which is what I did), flatten the dough out on a floured surface (I used tapioca flour to flour the surface).
Step 4: Baste the dough with some butter and then spread applesauce on it, adding more or less depending on your preference (translation: you may use more than 1 cup or less – depending on what you prefer).
Step 5: Roll the dough gently into a long cylinder shape. Then, using a sharp knife, cut it into 1-2 inch sections. Set these upright in your pie pan (there’s your rolls!).
Step 6: Bake for 25 minutes or until golden brown and bubbly on top. While they’re baking, use a hand or electric mixer to mix together all of your icing ingredients. Ta-da, you have dairy-free frosting/icing now!
Step 7: Let the rolls cool for a bit and then slather them with icing. Eat warm, THEY ARE DIVINE.
Please note: These taste exceptional for the first 3-4 days, after that, not so much. So be sure to enjoy them immediately and share with friends & family too.
