My husband LOVES to buy bananas. Like lots of them. He’s always convinced that he’s going to drink a ton of smoothies that week and/or eat two bananas daily…why he thinks this, I’ll never know.

I’ll literally say in the grocery store as he grabs two huge bunches, “Honey, please. Put the bananas down. Don’t do this.”

To which he retorts, quite confidently, “I’m going to eat all of these. I promise.”

But what he really means is, “I know you hate to waste food and so do I, so I’m going to let these get super brown so that you have no other choice but to turn them into banana bread for me.”

Which of course I do.

And now, I’m going to share it with you because maybe you have someone in your life who also likes to buy a shit-ton of bananas but never eats them all before they turn brown?

This recipe also gives me the opportunity to share with you the stevia sweetened chocolate chips I’m over-the-moon about (20 years ago when I first started eating this way and there were only salads to eat, I never would have imagined this! I’m in heaven. Like, literally, I’m in heaven on earth. ;)).

Enjoy this yum-a-licious grain-free, sugar-free, corn-free, soy-free, dairy-free chocolate chip banana bread!

Ingredients:

  • 1 1/4 cups almond flour
  • 1/2 c coconut flour
  • 1/2 c arrowroot flour
  • 1 t of baking soda
  • 1/2 t of Himalayan pink sea salt
  • 1/4 c Xyla non-sugar sweetener
  • 4 super ripe bananas, mashed
  • 4 organic eggs, beaten
  • 2 t organic vanilla extract
  • 1/2 c organic butter, vegan butter or coconut oil, melted
  • 1/2 c Crave Stevia no sugar chocolate chips (out of all the ones I’ve tried, these are my fave!)

Step one: Preheat oven to 350.

Step two: Mix all dry ingredients together in one large bowl.

Step three: Mix all wet ingredients together in a medium bowl.

Step four: Pour wet ingredients into dry and hand-mix all together until completely mixed.

Step five: Stir in chocolate chips.

Step six: Oil a loaf pain with coconut oil. Pour a little over half the batter into loaf pan and bake in oven for 50 minutes or until golden brown. There will be enough batter for 1 full loaf and 1 mini loaf. Bake the mini-loaf for 30 minutes.

Step seven: Place your right palm over this bread and bless it with the highest Love and beauty for your body and for all who eat it. And so it is. It is so.
