My nephew has proudly declared that he does NOT like gluten-free anything.

THEN, he had one of these muffins.

And said, “Well, I DO Love these!”

He then promptly asked that his grandma (my mom) begin making these at their house. He told me he could eat all of them (and devoured the one I brought and let him try).

So if you’re ready to inspire your Loved ones to a new, conscious method of eating, this just may be the recipe to try:

Step 1: Preheat oven 350. Coat muffin tin with coconut oil to keep muffins from sticking.

Step 2: Mix oats, flour, baking powder, baking soda, cinnamon together. Then add “sugar”, butter of your choice, hemp milk, egg and vanilla. Then mix in chopped apple. You may choose to add more hemp milk depending on your taste preferences, so honor your intuition on this.

Step 3: Using a cookie scoop, scoop mixture into muffin tins until just about full for a thicker batter and ¾ full if you are using a thinner batter.

Step 4: Bake for 25-30 minutes, until golden brown.

These muffins last for around 4 days, keep them in the fridge or freeze them and reheat. The are delicious warm and actually even better after sitting overnight in the fridge and reheated.

Oh my!! I made these this past weekend and LOVE them!! Totally perfect as we are heading into fall now and apples apples apples will be in season! Blew my mind the recipe was calling for a Tablespoon of cinnamon .. I was like really? I’ve never used that much cinnamon in a recipe but I followed the recipe and … perfect amount of seasoning!! AMAZING good .. and yielded 12 muffins so .. I have some in the freezer for next week too!! Thank you!!
