My sweet friends Allison & Jared Curtis of the KindHuman Tribe inspired me to make this cookie recipe for the HolyDays.
These superfoods cookies are SO nourishing and packed with organic superfoods and protein, plus they taste DELICIOUS.
It doesn’t take much to create these either. You’re gonna love them!
Ingredients:
- 2 organic ripe bananas
- 4 organic medjool dates
- 5T organic sunflower seed butter
- 1T organic, local honey
- 3/4 cup organic plant-based milk (I used organic oat milk)
- 5T Pumpkin Spice Protein (only available for a limited time, can replace with Chai Spice Protein, Matcha Protein or MVP Family Chocolate)
- 2 cups organic oats
- 1 bag of refined sugar-free chocolate chips
Step one: Preheat oven at 350 degrees. Put the following into a blender: bananas, dates, sunflower seed butter, honey, milk and blend until smooth.
Step two: In a separate bowl, mix the organic vegan protein powder and oats.
Step three: Pour blender mix into dry ingredients and mix.
Step four: Once fully blended, stir in the chocolate chips.
Step five: Put cookie dough in fridge for 30 minutes.
Step six: Pull out dough and drop onto baking sheet with parchment paper. Use a fork to flatten.
Step seven: Bake at 350 for 18 minutes.
