When the organic bananas start stacking up in the fridge, what’s a Creatrix to do? Make Banana Nut Muffins of course.
This is a super easy recipe (one of my superpowers ;)) and is a great healthy treat to take to potlucks, women’s circles, and to those you love.

Ingredients:
- 3-4 ripe organic bananas, mashed
- 2/3 c organic sweetener (I used coconut sugar, use whatever is most aligned for you)
- 1 large organic, local (if you can) egg
- 1/3 cup organic coconut oil, melted
- 1.5 cups organic grain-free flour blend, like this one
- 1t baking powder
- 1t baking soda
- 1/2t sea salt or Celtic salt
- 1t cinnamon
- 1 c organic walnuts, chopped
For topping (optional):
- Small handful of chopped walnuts
- 2T of organic coconut brown sugar or other brown sugar replacement that is aligned for you
- 2T of Miyoko’s butter
Step one: Preheat the oven to 350. Use a silicone or cast iron muffin pan – coating each muffin tin with melted coconut oil (I use a pastry brush to do this).
Step two: Mix all dry ingredients together, creating a well in the center of the loose flour blend.
Step three: Add in all wet ingredients including the bananas and then mix the two together until well blended.
Step four: Scoop batter into muffin tins, filling at least half full.
Step five: Mix the topping ingredients in small bowl and put a small spoonful of it on top of each muffin.
Step six: Bake for 20-25 minutes or until a knife comes out clean into each muffin. Let cool for 10 minutes.
Step seven: Bless and share with those you love! You can also freeze these and reheat in the oven for special occasions.
