When you think pancakes, you usually think syrup, right?
Wrong! 😉
I love this pancake recipe because it’s so simple, high-vibe and there’s no sugar involved.
Instead there’s yogurt. Dairy-free yogurt that is.
I Love making this on Sunday mornings after our Sacred Sunday Service Meditation.Â
Ingredients:
- SavorTooth grain-free pancake mix – you’ll need 1 high-vibe egg and I like to use organic almond or oat milk as the liquid
- 1/2 c organic blueberries
- 1/2 c organic non-dairy yogurt like Forager or CocoJune – plain, unsweetened
- Organic cinnamon
- Organic coconut oil
- Organic vegan butter, like Miyokos
Step 1: Coat a cast iron skillet with organic coconut oil on medium heat. Pull out yogurt from fridge.
Step 2: Follow the directions on the SavorTooth pancake packaging – simply mix the 3 ingredients together.
Step 3: Add in blueberries to the mix.
Step 4: Place small round spoonfuls of the pancake mix with blueberries onto the skillet. Cover for a few minutes to cook.
Step 5: Only flip pancakes over once there are a multitude of small bubbles formed on the side of the pancake that’s face up. Then, cover and let cook for a few minutes.
Step 6: Once pancake(s) are fully cooked through, remove and place on plate. Slather with vegan butter, top with unsweetened plain yogurt and sprinkle with cinnamon.
