We picked up strawberries at our farmer’s market today – which means we have officially entered berry season! This is ecstatic news for those of us who love healthy desserts – berries are a perfect option for creating yummy desserts.
My husband requests that I make a cobbler weekly, he loves this recipe so much. In fact, he’s tried to get me to make Kristian’s Kobblers one of my next business ventures, but alas, I’ve watched enough SharkTank to know that food-based businesses are a rough road to go down. 😉
So instead, I’ll pass this amazing (& easy) cobbler recipe onto you to bake for those you Love (and maybe now your husband/wife will beg you for a cobbler each week!):
- Use an 8×8 glass pan OR if you’re in a jam like I was (we were traveling) you can use a loaf pan like featured in this photo.
- Coat the pan with coconut oil.
- Next, fill about 1/2 way full with organic berries – these were blackberries we had picked off of our land and frozen so we could have cobblers year-round.
- Add 1T of arrowroot flour to the berries and mix.
Then in a separate bowl, add the following:
- 1 cup of almond flour
- 1 cup of gluten-free, quick-cooking oats
- 1/2 cup of Wholesome Zero sweetener (for optimal results, please use this sweetener – I’ve tried this recipe with all different kinds of sweetener and this is the one that gives the cobbler a sweet/crispy taste that is cobbler perfection!)
- 1t of Himalayan pink sea salt
- 1/2 cup of coconut butter or organic butter or vegan butter, slightly softened, but not melted
Preheat oven to 350. Mix the flour, oats, sweetener and salt in a small bowl. Next, cut in butter – I do it the old-fashioned way with a fork and knife, but you could be way more legit and use a pastry cutter. Next, pour mixture over the berries. You may wish to sprinkle a little bit of organic cinnamon over the top too. Bake for 45 minutes. You want the berries bubbling up through the crust and the top golden brown, so you may want to put it back in for up to one hour, depending on your oven.
You may wish to top your cobbler portions with Coconut Bliss Naked or Vanilla flavored ice cream if you can tolerate agave syrup. I prefer to eat it hot and right out of the oven.
