My hubby and I collaborated on this delish dinner.
It features micro-greens that we grow ourselves, as well as fresh rockfish from the Pacific Ocean (bought from a local vendor down the Coast from us), as well as greens from the local farm.
You could call this a rockin fish-to-table metaphysical meal.
Prepare this for the ones you love, or the next time you have loved ones over for dinner. It’s an excellent dinner for entertaining.
Ingredients:
- 2 rockfish fillets (This is a dinner for 2, double the ingredients here if you have more dining with you.)
- 3 cloves garlic, finely diced
- 1/2 c of organic white onion, diced
- 1 c of asparagus, diced
- 1/4 c of grass-fed butter, vegan butter, or coconut butter or 1/8 c of avocado oil
- Sea salt
- Organic black pepper to taste
- Dash of smoked paprika – to taste
- Dash of organic turmeric – to taste
- Organic garlic powder – to taste
- 5 organic sweet potatoes, quartered
- Organic salad greens
- Microgreens – 1 cup+
Step one: Put quartered sweet potatoes into a pan of boiling water, cook until soft and tender.
Step two: In a large skillet, sauté the butter/oil, onion, asparagus and garlic cloves. Cook until brown. Then add fillets of rockfish over this veggie and oil mixture. Season with salt, pepper, paprika, turmeric – dashes of turmeric and paprika only. Cook until the edges turn white – roughly 7-10 minutes. Once edges of fish turn white, flip over to the other side. Season with salt, pepper, paprika, turmeric – dashes of turmeric and paprika only. Cook another 7-10 minutes covered until fish is fully white and cooked through.
Step three: Once potatoes are soft and tender, mash with a fork or a legit masher :). Adding salt and garlic powder and some oil or butter.
Step four: Plate up! Add salad greens to the plate and top generously with microgreens, and your fave salad dressing (highly recommend Creamy Ranch by Tessemae). Add the rockfish fillet to the plate and then top with cooked onions, asparagus and garlic, and some microgreens. Dish up the mashed sweet potatoes and top with microgreens if you love them as much as we do (nutrient-dense, home-grown foods are the best).
