I Love soup. And cookies. (This information is for whomever is going to write my biography. ;))
And I Love to make said soup in the crockpot. It’s easy and simple and allways turns out delicious.
So, I know You’re going to LOVE this GF, DF, SF, Vegan soup almost as much as I do (or maybe more).
Not to mention, it pairs really nicely with Pacha toast topped with dairy-free butter.
Ingredients:
- 1 organic yellow onion, chopped
- 3 organic carrots, sliced
- 3 organic celery sticks, sliced
- 1 small bunch of organic kale (I prefer Red Russian, but you can use whichever you prefer), chopped
- 2 cans of organic white beans, I chose Eden Organics great northern
- 2T organic olive oil
- 2t organic smoked paprika (which gives it a super delish smoky flavor)
- 2t sea salt
- 1 carton of organic vegetable broth, roughly 4 cups
Step one: Wash and chop your veggies and put all ingredients into the crock pot.
Step two: Cook on high heat for 3 hours.
Step three: Bless, toast your Pacha bread, and enjoy!
