This is my fave, super-easy dinner recipe.
It’s also great as a “cleanse” meal or when you’re doing a dietary reset.
I actually eat this every night my husband is gone or traveling – because it’s so simple and nourishing, which is just The Way I like things. 🙂
Ingredients:
- Whatever organic veggies you have available: cauliflower, broccoli, onion, kale/spinach/chard, peppers, carrots, sweet potato, etc.
- Organic coconut oil – if you wanna go super high quality, use Tropic Oil – it’s another level.
- Eden Organic pinto beans (they pressure cook their beans beforehand, eliminating all lectins – which contribute to leaky gut)
- Organic Hummus – Go to Step 2 in our recipe here.
Step one: Make hummus, found in step 2 of this recipe here.
Step two: In medium skillet, place 2T of organic coconut oil and let melt.
Step three: Add in onions, peppers, cauli, broccoli, carrot, sweet potato – any veggies that take a bit longer to cook. Cook on medium low heat covered for 5-7 minutes.
Step four: Once veggies are softened, add in kale/spinach/chard – any greens and other veggies that cook quickly. Cook on low heat covered for a few minutes until steamed.
Step five: Once veggies are soft, serve! Top with hummus and sprinkle with any of your fave seasonings (seen here organic paprika).
