If you’ve been reading this blog for any length of time, you know I love me some mac-n-cheese.
I’ve tried and will continue to try any version of gluten-free, dairy-free mac-n-cheese I can find.
Because life should be fun, and trying out various mac-n-cheeses really does it for me. 🙂
Which is why I’m SO excited about my latest discovery.
This is by far the easiest mac-n-cheese to make – and it happens to be grain-free and vegan.
You’re gonna love this…
Ingredients:
- 1 package of Jovial Grain-free Cassava Penne pasta (my new fave grain-free pasta btws)
- 1 package of Urban Cheesecraft Dairy-free Mix Creamy Mac Sauce (which has the best smoky flavor giving you a really Divine mac experience!)
- 1/2 cup Bob’s Red Mill almond flour, finely ground
- 1.5 c alkaline water
- 1/4 c organic sunflower oil
- Organic sea salt & pepper to taste
Step one: Bring a medium sized pan of water to boil.
Step two: Blend almond flour, ingredient package from the Urban Cheesecraft package, water and oil in a blender until smooth.
Step three: Return to boiling water – Add pasta. Cook for 15 minutes (the directions say 13 minutes but I found it needed a few minutes longer to be as soft as I like).
Step four: Return to blender – Pour the mixture into a medium-sized stainless steel or cast iron pan at medium heat. The mixture will miraculously begin to thicken. Continuously stir until it’s thick and a bit fluffy.
Step five: Strain finished pasta and pour back into the medium saucepan it had been boiling in, take off heat.
Step six: Pour hot, thick cheese mixture over top of noodles and stir until well-blended.
Step seven: Bless, plate, salt&pepper and serve! Super yummy when topped with a sprinkling of microgreens too (we ate it before we realized we had forgotten to take a picture. That’s how delish it is. Oops!)
