For those of you not feeling aligned with eating animal flesh this HolyDay season or for those of you wanting to mix up the same-ole-same-ole and experience a truly nutritious HolyDays feast – may I present to you: Cauliflower “Turkey!”
I know, cauliflower has gone through a massive make-over and it’s now one of the most versatile veggies that you can use for just about any sumptuous vegan meal.
We regularly have cauliflower tacos, cauliflower “wings” and this delicious cauliflower “turkey” bake.
Bring this to your next Harvest Dinner, Winter Solstice potluck or any of those traditional holidays that you might be celebrating this year!
Ingredients:
- Organic cauliflower
- Organic potatoes
- Organic sweet potatoes
- Organic beets
- Organic carrots
- Organic red onion
- Organic brussel sprouts
- Organic bell peppers
- Organic garlic
- Organic Sunflower or avocado oil
- Organic garbanzo beans, drained (I love Eden Foods – they pressure cook their beans ahead of time, so they are much easier to digest and do not create or aggravate leaky gut).
- Organic tahini
- Organic salt & pepper
- Organic cumin
- Organic tumeric
- Organic smoked paprika
- (Or instead of the above spices you can substitute a packet of organic fajita or taco seasoning – your choice! :))
Step one: Preheat the oven to 440. Using a large 9×13 glass pan, coat the pan in oil. Place the cauliflower in the center of the pan.
Step two: Use any or all (or bring in your own) of the veggies above and cut them in large chunks (see featured photo) and center them all around the cauliflower (the cauli is the star of this show).
Step three: Coat the cauliflower in oil, saturating it so it stays nice and moist. Also drizzle oil over the other veggies.
Step four: Pour the garbanzo beans around the base of the cauliflower and over the veggies.
Step five: Use the spices mentioned or a packet of organic fajita or taco seasoning and season to taste all over the cauliflower (as the main event) and over the veggies around it.
Step six: Cover the cauli and veggies with foil and bake for 1.5 hours. Cauli and veggies will be completely soft and cooked through.
Step seven: Dish up each bowl and drizzle tahini over each serving. You can also garnish with organic green onions as well.
