Gluten-free Chai Spice Pancakes

I have a not-so-secret passion for showing that delicious “comfort” foods can be transformed into superfoods and still taste totally delicious. (See any recipe on this site.)

Next up – Pancakes!

These organic, vegan-protein-rich, superfoods pancakes are absolutely yummilicious (the technical term) and I know you and your family are going to love them.

I use a super easy organic vegan, egg-free pancake mix as a base for the ultimate convenience.

Check it out:

  • Thrive Market Organic Protein Pancake & Waffle Mix, 1 cup
  • 1T organic coconut oil
  • 2T organic flaxseeds
  • 3T warm water
  • 3/4-1 c organic almond milk (add more milk if you like a thinner batter)
  • 3T Purium Chai Protein
  • Organic sunflower butter
  • Organic, raw & local honey

Step one: Mix all ingredients together until well-blended.

Step two:  On medium-high heat, place 1-2T of organic coconut oil in a medium skillet.

Step three: Place two heaping spoonfuls of batter in the skillet, flatten if you have a thicker batter. Cover and cook on medium-low heat until bubbles form at the top and then flip when super bubbly and cook until golden brown.

Step four: Top your finished pancakes with sunflower butter and honey, bless and enjoy!
