It’s that annoyingly awesome time of year where everything is…PUMPKIN!!
So, while I’m sure you’ve been enjoying bounteous pumpkin offerings everywhere, I’m quite positive that you have not ever before come upon an organic, superfood Pumpkin Spice option.
Am I right?! I know I am. 😉
And now…
May I present to you the most decadently, light and fluffy gluten-free, pumpkin spice French Toast of your life…Enjoy!
Ingredients:
- 4-6 slices of cinnamon raisin Bread SRSLY (organic) or any gluten-free cinnamon raisin bread
- 2 farm fresh eggs by blessed chickens that you love
- 2/3 c of organic vanilla almond milk, unsweetened
- 2 t of Purium’s Pumpkin Spice Protein
- 1 t of organic cinnamon
- Miyoko’s vegan butter
Step one: Whisk eggs and milk together in a large bowl. Then add pumpkin spice protein, followed by cinnamon until well blended.
Step two: Place 2 slices of bread into the batter, letting them soak for 2-3 minutes on each side.
Step three: Place the amount of your choosing of Miyoko’s vegan butter in a large pan on medium heat. Once butter is melted and has been spread across the entire pan, add in your 2 slices of bread, now thoroughly saturated in the batter. Cover.
Step four: Cook on medium heat for 3-5 minutes and then flip over for another 2-4 minutes or until the toast is at your preferred level of golden brown.
Step five: Remove the toast from the pan and onto a plate, slather in more Miyoko’s vegan butter and add some fresh, homegrown berries. You may also choose to top this toast with organic almond butter and organic jam (sugar-free of course) or coconut nectar if you’re into syrup.
