Vegan, Grain-Free Pizza

Metaphysical Menu Vegan Grain Free Pizza

Friday nights growing up were pizza nights.

Because my mom worked at the local pizza spot, we could have pizzas of all kinds and boy, did we (me & my five sisters) LOVE us some pizza.

After, we would blast the likes of Journey, Boston and Fleetwood Mac while dancing around the house with all of the lights turned off.

This is one of my favorite childhood memories, and has resulted in my being a ginormous pizza fan.

But, because of my dedication to healthy eating as an intuitive and highly sensitive being, I’ve had to find a way to make pizza uber healthy and mouth-watering delicious.

And loves! I believe I have done it.

Check out this vegan pizza recipe for top notch healthy eating – pizza style:

Step one: Make the pizza crust. Simple Mills is one of my top brands for eating grain-free and sugar-free. Their mixes are top-notch and use simple ingredients. Their Pizza Dough mix is the best (and again, I’ve tried all of them, so I am speaking from 18-years experience of eating gluten-free/mostly daily-free and refined sugar-free.). I use organic olive oil for the pizza mix and bake the crust at 350 for 5 minutes as outlined, before adding any toppings.

Step two: Cheese. Daiya shredded chedder wins for this recipe. Use one bag for the base level cheese and cheese topping.

Step three: Organic / Local Veggies! Slice 1/2 of a red onion, and 1/2 red pepper, 1/2 green pepper and 1/2 orange pepper, along with 1/2 cup sliced spinach greens. Feel free to add any other veggies that light you up. We had these in the house from our co-op and local farm, so that’s what I used.

Step four: Putting it all together! My body is not a huge fan of preservatives and I’ve found that citric acid is one that is in a lot of items and so I try to cut it out wherever possible. Pizza sauce is one of those places where you’ll find citric acid hiding out. I was guided to use strained tomatoes as my pizza sauce as it’s 111% just tomatoes and it’s a perfect sauce to use. These organic strained tomatoes by Bionaturae are my pizza sauce go-to.

  • Using a spoon, pour out the strained tomatoes onto the baked crust, spreading around to the edges of the crust.
  • Next, sprinkle half the bag of Daiya cheese on top of the sauce.
  • Next, add onions, peppers and greens.
  • After that, sprinkle the remaining half of the bag of cheese over the top of the pizza.
  • Cook for 15-20 minutes on 350.
  • Let cool for 5 minutes (you do not want to burn your tongue or mouth on melted Daiya cheese, #trustme).

Step five: BONUS, for some out-of-this-world dipping goodness, dip your pizza in this Avocado Ranch (no dairy baby!) dressing. #mindblown

As always, bless your food and then dive in and enjoy! Xo
