Some nights I just don’t want to cook.
I’d rather bake and eat cookies.
So Hillary’s veggie burgers are my fave answer for night’s like these.
This super-easy dinner will make your life easy AND delicious.
Ingredients:
- Hilary’s Worlds Best Veggie burger
- Homemade epic hummus – recipe here
- 1/8 c organic red onion, sliced
- 1 organic zucchini, sliced
- 1/2 broccoli floret, chopped
- Organic garlic salt to taste
- Avocado oil
Step one: Make the epic hummus using the recipe here.
Step two: Have two medium skillets on the stovetop – one for the veggie burger, one for veggies. Coat both pans with Avocado oil, place on medium heat.
Step three: Begin with veggies – sautéing veggies in avocado oil and sprinkling with garlic salt.
Step four: Put your veggie burger (or burgers) on the other skillet, cover. Cook for 3-5 minutes and then flip, should be golden brown. Cook another 3-5 minutes until to the desired level of golden brown.
Step five: Place burger on plate, top with sautéed veggies. Then plop a healthy dollop (or more) of hummus on top.
