Grain-free Raspberry Scone-Cake-Pie

There’s an amazing bakery on the Oregon Coast that makes the absolute best gluten-free scones.

Occasionally I indulge and when I do it’s like a slice of heaven in my mouth.

But…

What’s not heavenly is the aftereffects of the dairy and refined sugar in these scones in my high-vibing body temple.

Sluggishness and tiredness ensue as yet another reminder of how lower vibrating foods like dairy and sugar impact the physical body.

So, when our berry patch produced an overabundance of raspberries this year, I knew just what to do – bake something scone-ish.

your body temple will feel amazing after eating these and they taste simply delicious. It’s the perfect mix of sweet and savory all in one epic high-vibe scone-cake-pie.

 

Ingredients:

  • 1/4 c Miyoko’s non-dairy butter
  • 1/4 non-dairy, sugar-free creamer, along with extra for the top of the scones (I used Califa Farms unsweetened non-dairy creamer)
  • 1 homegrown egg
  • 1/2t organic vanilla extract
  • 1.5c grain-free flour blend (I used Bob’s Red Mill)
  • 1T organic arrowroot
  • Juice from 1/2 an organic lemon (if you want to make this more raspberry lemon flavor, include the juice of 2 lemons and some lemon zest)
  • 1/4c organic coconut sugar
  • 3/4c organic raspberries (best when homegrown :))
  • Glass pie pan
  • Organic coconut oil to grease pie pan
  • Pastry brush

Step one: Preheat oven to 400 degrees. Mix dry ingredients together and create a well in the center.

Step two: Add wet ingredients to the well in the middle of the dry ingredients.

Step three: Combine mixture. Dough will be slightly choppy due to butter, this is okay.

Step four: Pour mixture into pie pan.

Step five: Press raspberries into doughy mixture.

Step six: Brush additional creamer over the top of the raspberries and dough.

Step seven: Sprinkle organic coconut oil over top as well.

Step eight: Bake for 20-25 minutes until golden brown.

Step nine: Bless, slice like a pie (or whatever shape you want it to be ;)) and enjoy!
