So, confession. This is the recipe that I beg my husband to make for us, at least once a week.
These easy tacos are so fresh, so yummy and so Divine – that they just taste better when your husband makes them. 😉
I highly recommend delegating this recipe to your partner and watch how even tastier they become. #noreallytho
Ingredients:
- Siete almond flour tortillas
- 1/2 a head of organic cauliflower (or go for the whole head if you love the cauli – it’s so good!), chopped
- 1 bunch of organic cilantro, thinly chopped
- Daiya shredded pepperjack cheese (my fave)
- 1 organic avocado, cut into long strips
- 1 c of organic cherry tomatoes, sliced in halves
- 1 can of Amy’s organic refried beans
- 3 c of organic sunflower oil
- Organic coconut oil
- For topping: your favorite organic salsa
Step one: Preheat oven to 270 degrees. Have veggies sliced and diced and ready to go.
Step two:Place the 3 cups of sunflower oil in a stainless steel or cast iron pot and cover, keep it on high for 11 minutes. Turn on the fan above the oven.
Step three:Â At 11 minutes, drop some of the cauliflower pieces into the oil, it should bubble all around it. Leave the cauliflower in the oil until it’s a nice golden color – this won’t take too long – so do not just leave the cauliflower unattended.
Step four: Coat a baking sheet with organic coconut oil. Place Siete tortillas on the pan, sprinkle with shredded cheese – however much you prefer (I love a lot of cheese ;)).
Step five: Place tortillas in oven – for a short time – 3-5 minutes so the tortillas are still soft and the cheese is lightly melted.
Step six: Put your tacos together! We like to add a scoop of the refried beans, top with cauliflower, add sliced tomatoes and avocado and then cilantro. Then top with your favorite salsa.
