Confession: I’m totally in love with Pagels (and they don’t pay me in any way to say this).
I went 20 years without a proper bagel people.
20 years.
Do you know what that does to a woman?!
Well, thank Goddess that Pagels were created … because it’s making up the majority of my 1-2 meals a day after fasting these days.
Enjoy this Farm-to-table (literally from the farm, to my table) Pagel!
Ingredients:
- One Everything Pagel
- Hummus (my easy-hummus recipe will change your life #yesitsthatgood)
- Sliced farm fresh cucumber (from our local farm)
- Sliced sun gold cherry tomatoes (from our local farm)
Step one: Slice your Pagel and toast it. Toast it at a higher setting to get a nice crisp crunch while still soft in the middle.
Step two: Slather your Pagel with hummus.
Step three: Top with sliced cucumber and then tomatoes.
Step four: Bless it, then dive in and enjoy!
