I know it’s “technically” spring, but it’s still cold AF on the West Coast, and that means I’m still eating a lot of warm, nourishing foods, like this Sweet Potato & Carrot Soup.
This is super easy to make, and will keep in the fridge for up to a week. I recommend making this for the week and enjoying it as a mid-day meal.

Ingredients
- 1 large organic sweet potato, diced
- 1 bunch of carrots, sliced
- 1T Carrot Juice Plus
- 3 organic celery stalks, diced
- 1/2 a small organic white onion, chopped
- 1 container of organic vegetable stock
- 1t of organic garlic salt
Step 1: Place all items, except the Carrot Juice Plus, in a medium-size crockpot and cook on High for 2-3 hours or until all veggies are mushy and hot.
Step 2: Once cooked, pour the contents of the crockpot into a VitaMix or other large blender. Blend on the 5-7 setting until fully blended.
Step 3: Add in Carrot Juice Plus and blend until well mixed.
