If you’d like to be the talk of the potluck, might I suggest…gluten-free, dairy-free Brazilian Cheese Bread.
One caveat, however, be sure to bake this when guests are ready to eat if you’re hosting.
or take the batter to the location of above said potluck and pop them in the oven upon arrival.
These are best hot, straight out of the oven.
I first fell in love with Brazilian Cheese Bread when I was in … well, Brazil.
The year was 2008. I was gluten-free and had been for over 7 years.
At this point in the world’s evolution that meant I just ate a lot of salads because there were zero GF options, especially for bread or baked goods.
People looked at me like I had bread on my face whenever I mentioned I had a gluten allergy. It was like living in bizarro world.
But when I went to Brazil – this cheese bread was EVERYWHERE – in bakeries, cafes, & at street vendors; and it’s naturally gluten-free. I was gloriously stunned to learn this and so…
naturally, and as you’d expect, I let myself fully indulge. And I did the same thing when I returned to Brazil in 2013 as well – in case you were wondering. 😉
one downside: Traditional Brazilian cheese bread is not dairy-free. But you’re in great fortune as this recipe totally is.
If for any reason you can’t eat these hot right out of the oven, you can also slather them in non-dairy butter to make them still completely delicious and a huge hit. (You know I’m allways going to hook you up with all the pro tips.)
Ingredients:
- 1 organic egg (preferably from the chickens you’re raising with love and feeding organic)
- 1/3 c organic extra virgin olive oil, with extra to coat your cast iron pan
- 2/3 c organic almond milk
- 2.5 cups of organic tapioca flour
- 1/2 cup vegan/dairy-free cheese like Miyoko’s (organic) or Daiya
- 1 t sea salt
Step one: Pre-heat oven to 400. Coat a cast iron mini muffin pan (or mini heart muffin pan as shown in photo :)) with organic oil.
Step two: Mix all of the above ingredients together until well-blended.
Step three: Scoop mixture into mini muffin pan.
Step four: Bake for 15-20 minutes until a nice butter toast color.
Step five: Bless and serve with love!
