Winter season in the Northern Hemisphere invites us to slow our pace, eat warm cozy foods and enjoy this contemplative time of year.
I’m a huge fan of crockpot soups, it’s an easy “set it and forget it” way to create restorative nourishment for you and those you love.
Grab a few organic veggies, get out your crockpot and enjoy this delish meal.
I recommend pairing in with organic GF sourdough toast and a glass of Apothe-Cherry (wine replacement, beautifies your skin and reduces inflammation).
Ingredients:
- 1 bunch of kale, thinly chopped
- 1 organic potato, quartered
- 3 organic carrots, quartered
- 2 T organic nutritional yeast
- 2t sea salt
- 2T organic all seasoning
- 1 box / container of organic veggie broth
Step one: Put all above ingredients in the crockpot.
Step two: Cook on high for 3.5 hours or until potatoes and carrots are so soft they fall apart.
Step three: Take half the soup and scoop into the blender. Blend on medium until pureed.
Step four: Pour back into the crockpot and bless.
Step five: Serve with a sprinkle of kosher salt and sourdough toast and enjoy!
