
These oatmeal raisin cookies are the best gluten-free cookie recipe eva, eva!
I’ve been gluten-free for 18 years and I’ve worked to perfect this recipe to be one of my faves. I’m so excited for you to get to try them too. 
Below is everything you need to rock this gluten-free oatmeal raisin cookie recipe:
½ c Just Like Sugar Baking
½ c Just Like Sugar Brown
½ c Coconut butter or ghee or unsalted organic butter, melted
½ c Hemp milk, vanilla unsweetened
1 t vanilla extract
1 ½ c gluten-free quick oats
1 c paleo baking flour (or any GF baking blend you prefer, I just keep it grain-free as much as possible, so honor your intuitive knowing for you)
½ t xantham gum
½ t baking powder
½ t baking soda
½ t sea salt
½ c organic raisins
Preheat oven to 350. Place all items in the order featured above in a large bowl, mixing until well-blended. Bake for 11-15 minutes. Let cool for up to 5 minutes before serving.
And because these are mostly grain free, albeit the GF oats, please store in fridge or freezer so they can go the distance. These cookies are also a great frozen summer treat too!
